... like so many other folks who have been blessed to see their 5th decade, My blood work starter going in the wrong direction. Elevated blood sugar, inflammation markers, hypertension and other signs pointing to pre-type 2 diabetes might be on the horizon. My Physician's assistant suggested that I eliminate all white sugar and white flour from my diet. Ok, I am a baker! and those two are key ingredients in my life. So I set out on a journey to gather knowledge and then apply that knowledge to my life. Out went all white sugar, white flour AND anything that contained HIGH FRUCTOSE CORN SYRUP. That removed about 75% of my entire refrigerator, freezer and pantry! Focusing more on the insulin resistance, I started practicing longer periods of fasting during the day and shorter hours of feasting. I refuse to eliminate bread from my life so the healthy choice of authentic, stone ground organic, naturally leavened sourdough was the obvious answer. From that mustard seed a passion grew into what I lovely call MY DAILY BREAD.
